I find sterilising in Le Parfait jars to be one of the best ways of preserving.
You can get electric ones but I have a huge metal bin which fits about 12 x 1litre jars at a time.

I love the idea though of fresh all year round...sadly we get periods of -18C in winter which tends to kill most veg off, but we do what we can.

I freeze tomatoes that don't meet her ladyship's standards (split, gone soft, etc) and make a batch of tomato sauce at the end of the year. They keep a lot of their taste that way.

amazing the difference fresh makes though isn't it? It's what you can't buy in the shop. picked some peas early and they wre amazing, pocked some more once they'd gone over - no better than shop.

Whilst my late MIL had (a) freezer(s), she bottled a lot of stuff as it was a better way of keeping some home grown produce. Tomatoes and plums in particular. Her runner beans, peas and broad beans were frozen but she blanched them with loads of bicarb which kept the colour and texture but destroyed any food value bar roughage. I daren’t mention plums to my 2 older children as it brings back memories of the many ways they were fed them over the year after school.

My veg patch is a disaster this year, but I'll join you next spring, VC. We're pretty self-sufficient most years apart from fruit all year round and courgettes and salad leaves in the winter. I never buy supermarket toms but do buy sun-dried ones in oil for salads.

I don't eat breakfast or lunch but, so far this evening, I've had potatoes, beetroot and two varieties of mint from the garden. It's raining (sort of, but not much) right now, but I'll go out and pick some greens to cook and eat with some brown rice later too - probably chard and mustard greens... maybe spinach if I can find any that hasn't bolted.

                Today...
                Breakfast...raspberries.
Lunch cucumber and tomato in a sandwich.
                Dinner potatoes and peppers.

And when your back stops aching,
And your hands begin to harden.
You will find yourself a partner,
In the glory of the garden.

Raspberries (my first year of home grown, so just enough to decorate some yoghurt;-))
                                Courgettes with pasta
Courgettes in curry, plus some assorted 2017 pickles with poppadoms
