Have you tried freezing tomatoes as passata? I just slice them upand then pur�e. cook for half an hour to an hour depending on how much you want to reduce down with some garlic, pepper and star anise. I also combine it with spices and cooked borlotti or gigabytes beans to make baked beans which I also freezer.

Courgettes, potatoes and spring onions in soup for lunch.
Beetroot in casserole with beans, peas, mangetout.
Also made some beetroot /chocolate brownies and some blackberry /yoghurt ice cream - tastes delicious, and I am looking forward to eating some that’s properly frozen tomorrow

One dwarf french bean (yes, really, just the one)
Two runner beans (my first ever homegrown ones, and so tasty)
Lots of beetroot stalks (while the beetroot itself is roasting ready to eat tomorrow)
All cooked with leeks, garlic, ginger, chillies, petit pois peas, soy sauce, sesame oil, peanut butter, a little agave syrup, tofu and some brown and wild rice. Pretty tasty
