              In the shop from the last ebay link there's some fascinating French kitchenalia - but concentrating on the 'sterilisation' bit and looking more closely at the stuff above, it seems like the electric ones come with and without a tap - but I can't figure out why!

                      Just to add my two penn'orth:

                      Piglet Willie is absolutely right - they only sell pressure canners in the US. The things Manda found are known in the States as BWBs - boiling water baths. However, the question you should really be asking yourself is - do you ACTUALLY need a pressure canner? What are you planning on preserving? If it's fruits and/or tomatoes, then you don't need one, as they are acid enough for botulism not to be any risk. If you're like me, you have the Familia Wiss-type jars (on sale in your local Super U or Hyper U!). You can sterilise these jars in the dishwasher, and the lids and rings by boiling for 5 mins. Bung your fruit or tomato sauce in these, put the lid on, do up the ring and sterilise EITHER in the oven OR in a boiling water bath (aka large saucepan with boiling water in it ). If you tell me what you're preserving and what size of jar I can even give you exact instructions and timings!
                      Your only problem is if you want to bottle (canning is just the American term, they use jars like us, not tin cans) meat or low-acid vegetables. THEN you need a pressure canner, and you need it because it reaches MUCH higher temperatures than a pressure cooker and will therefore kill any botulism spores. I have one that I got from the States last year - it is ENORMOUS - I could practically put my daughter in it (and she has come pretty close today, let me tell you) and we had looked all over everywhere beforehand to try and get one. My husband is French, so we had half the population of France looking - you just can't get 'em.
                      You're right, the French ARE really into preserving - but they do jams and conserves and fruit purees. Things like beans are preserved with salt (so no need for a pressure canner).
                      The real question is, do you like tinned veg? If you think it tastes like it's been dead for several decades (as I do) then stick to fruit and just blanch your veg and bung it in the freezer!
                      Do let me know what you're "canning" and I will give you step-by-step instructions - I belong to several canning forums (fora?) and have recipes and timings for more-or-less everything, so am happy to help.

                        Crikey this thread has moved on since I went to bed.
                        I never knew there was a law against domestic appliances that can reach over 100 degrees (no little symbol).
                        I do indeed have the Familia Wiss jars (and many others) which was why I was sure I could buy a canner, and as I said, I was also given a jar of home made pate that popped when I opened it. Now I read that it was probably done in a water bath, and thus was likely to kill me. Zoiks!! However I appear to be still here.

                          Bob, you can get them from several outlets in France.

                          There's a supplier called TOM.fr which supplies just about everything for canning and preserving.

                          Also, nip along to a France Rurale or your local Co-Operative Agricole outlet and ask them whether they can supply them.

                          I know several people round here who do domestic canning - I'm seeing one for drinks and aperos in a few weeks, if you can wait until then, will find a supplier.

                          Do you know that most Weldom stores can put you in touch with a canning service?

                            I have just come back to this thread as I am on my way home in a couple of days.
                            I have a Weldom near me, not heard of TOM.fr but will have a look.
                            As for the France Rurale and Co-Op Agricole, I know they abound near me.
