  • Dissappointing sausages

    I make sausages but I am not satisfied with the texture. The flavour is fine but they tend to be dry and crumbly. I want to make moist meaty ones. I only use best ingredients ie shoulder and belly of pork. I have tried adding soft breadcrumb but it didn't make much difference. Where am I going wrong or not doing?

    I've never made sausages Bren, I'm very impressed

    I'm just wondering whether you're not adding enough fat???- cos that would make them juicier.

      I should imagine that commercial sausage makers use more fat and/or water
      They could also be using some sort of emulsifying agent to bind it all together; try adding an egg to your mixture
