Straw & Duck Poo as mulch?

Can I use the straw that has been in the ducks shed for mulch under cardboard?

The ducks are being cleaned out 3 times a week, and I have more straw/poo than my (5) compost bins can cope with (not enough green matter to mix it with)

I had thought of putting it on my empty beds and covering with cardboard/plastic until Feb/March time... would this work?

Should be great, the straw will soak up the excess nitrogen from the duck poo and break down without taking any extra from the soil.

I've been doing it with chicken poo and straw and the first lot I did, over cardboard was last March and this has all broken down and this previously undug soil now has a nice crumbly top layer. Doesn't kill the bindweed though, that was still growing underneath....

I am doing this with a mixture of rabbit poo, and chicken poo that my mum is delivering next week, after she gets my sister to clean the chook house out ready for the winter.

As long as you don't put it round growing plants it should be fine. I know the ideal mix for compost heap should be a mix of materials, but people stack stable manure to rot down in separate heaps, so there is no reason why you can't do the same with your duck cleanings, rather than mix them with green waste. They'll still rot down.
