Home made greenhouse

I'm making a homemade greenhouse out of wood and polythene 1.2mx4.8m, boxed shaped with the ends removable for access and ventilation. I intend to grow tomatoes, cucumbers and aubergines in grow bags.

How tall will i have to make this for the tomatoes and cucumbers to grow happily? Can i pinch the tops to stop the growth when they are at an adequate size? Would this encourage more growth below or seriously decrease the yield?

Basically, as long as you can walk into it, and you're not a dwarf it should be ok heightwise for toms! 5 to 6 foot is ok!
