My winter shallots are flowering, does that mean that I need to take them up now or are they alright if I just take the flowers off? Feel abit thick asking but we have never raised onions successfully before as they have rotted due to the weather.

Nip the flowers/buds out, we have had the same problem down here with onions as well as shallots its been very dry and had to water a couple of times -
It's apparently cold that induces bolting, not dryness
