Beetroot eating

Hi viners, lifted beetroot last Friday, how long before I have to either use it or boil and store or pickle it?

I succession sow and leave them in the ground until ready.

You can store beetroot like carrots, in a frost-free place in slightly damp sand - no need to cook or pickle till you want to use them. Too late to say they are fine left in the ground with a bit of straw over for protection from winter frosts. Hey ho, never mind.
