    Does anyone know the best time to carry out notching on fruit trees. I want to encourage a couple of couple of buds to break forth into branches to fill a couple of spaces to even up the balance of an apple tree. Thanks.

    In my experience, the best time is a few weeks before the tree comes to life. It will probably still work if you do it now or within a few weeks. From mid-summer to mid-winter it's more likely to just heal over without producing a new shoot.

    The cut needs to be reasonably deep to ensure the sap flow is adequately disrupted and wide enough that it doesn't quickly heal over and restore normal sap flow.

      According to my 1947 copy of 'The Lorette System of Pruning' March and April is when you should notch. I'm sure, as said above, now will be fine as there's plenty of growing season ahead. Just don't delay!
