    I imagine it would take many years to grow a tree from seed to a fruiting size.
    Also, you might struggle to find seeds in the first place. Japanese persimmons (which all the ones you buy from the shops are) are parthenocarpic, so they set fruit without the need for pollination. This means that the majority of fruit are naturally seedless. You'll only ever find a seed if some pollen from a male tree managed to find its way all the way to the orchard (male and female flowers are on separate trees).
    Also, since there are separate male and female trees, you may spent all that time raising your seedling tree only to find that it's a male, and thus useless.
    Honestly, if you really want to grow a persimmon tree, you are better off buying one, even though they are a bit costly.
    They can also be propagated by hardwood cuttings taken from the most recent year's growth, if there is a persimmon tree near you somewhere.
