Sauvignon Blanc is at best a marginal recommendation for UK conditions. The best chance of ripening any grapes in our temperate climate (cast your mind back, it was once and may well be again) is to ensure that the vine does not over crop, and position the vine in the warmest/sunniest location you can. Our grapes are trained against a stone wall which absorbs a tremendous amount of warmth from the sun, and acts like a radiator during the night. We chose varieties better suited to the UK, and along with careful annual training, we hope this micro-climate will help us produce our first mini-vintage this year.
