A branch on the pear tree got damaged the other day whilst moving a shed. It's still a small tree and the branch is hanging on, but broken. If I tape it together will it eventually fuse back together? The cambium is still intact for half of it. Or is it just better to cut it off?

It has a good chance of healing if it is bound with a stretchable tape (parafilm, electricians tape, clingfilm) and then a cane tied to it to stop it breaking further.
Don't let that branch carry fruit for a couple of years or it'll break.
As it's dormant, you'll probably find that if you prune off the broken piece, that it'll regrow the branch from what remains (and will produce some side branches from buds near the pruning cut) next year, in the same way as if you'd been doing your usual winter pruning.
If the branch has broken close to the trunk, you may not have any buds on what remains, so you may have to bind it up with tape and a cane, or lose the branch.
Either way, it'll be a couple of years before the branch can bear fruit..
