When to cut back strawberry foliage?

Our strawbs have gone great guns this year, but I think we've peaked and the fruit will be all over in a week or so. We want to look after our (quite large) strawberry patch and a friend told me that at some stage after the fruit is done you cut back the foliage to nothing. If this is right, should I do that once the fruit is over, or wait til the autumn when the foliage dies back?
