Is this a good time to move raspberries that have spread out and grown where they shouldn't have please? Or do I wait til winter when they are more dormant? They finished fruiting a few weeks ago.

If you want to keep a plant, it should only be moved in winter when they are dormant.
Loss of leaves, or loss of roots while the plant has leaves, can really weaken a plant.
A few tests I've done in recent years suggest that plants are more likely to become infected with root diseases if transplanted while they have leaves on (therefore suffering root damage while growing makes the wounded roots more easily infected by diseases, but doesn't seem to be anywhere near as much of a problem if plants are moved when dormant)..
