Firstly, I know it is not olive pruning time but don't worry ... I'm just thinking ahead!! I have this tree in my garden, I am guessing about 3-4 years old. It is healthy and grows, flowers and fruits well each year. I'm starting to look a bit more in to how to prune olives and am aware that the centre needs to be open, which is easy enough. Most literature and references say there should be 3-5 main laterals to form a framework, that come off the trunk at bout 45-60deg. As you can see this isn't the case and the whole tree has a very tall, thin look. Is there any way I can get more of the 'goblet' shape than the 'champagne flute'?
