Noticed the branches on my gooseberries were getting bent to the ground. The cause was the sheer weight of gooseberries, so I started to thin them out. I have eventually removed about a third of them, which has relived some of the pressure on the branches. Is this sufficient or should I remove 50% of the fruit?

Personally I'd have left some branches touching the ground and let them root.
If you make a U shape out of a bit of wire and push it into the ground astride the branch ypu'll find it'll grow roots- then in the Autumn/ Spring ( depending on the rootball size) cut the branch on the plant side of the roots, and pot on the newly rooted branch!
