  • Black currants, yak! Any recipes to sweeten them?

    So me thinking the series would be sweet bought 3 bushes last year or the year before, and they are awful!

    I've got loads so don't want them to go to waste so I was wondering if anyone knows of any good cordial recipes for them.

    INGREDIENTS & METHOD

    450g blackcurrants. stalks removed and washed
    250g caster sugar
    500ml water
    Juice of one lemon
    Place the blackcurrants, sugar and water into a medium saucepan. Dissolve the sugar over low heat, stirring to dissolve the sugar.

    Once the sugar has dissolved bring the syrup to a gentle simmer.

    Simmer the fruits for 10 minutes, add the juice and skin of the lemon.

    Bring the syrup back to simmer for further 5 minutes.

    Let the cordial cool for 10 minutes and sterilise glass bottle.

    Pass the cordial through a fine sieve, pour the cordial into the sterilised bottle, cool and keep refrigerated until needed.

    To serve, dilute the chilled cordial to taste with chilled sparkling or still water and plenty of ice cubes.

      OR:

      Make your own blackcurrant cordial
      500g blackcurrants
      275g sugar
      250ml water
      ½ tsp citric acid

      1 In a heavy-based pan, simmer the sugar, blackcurrants and water gently for 5 minutes.

      2 Using a potato masher, break up the fruit to release as much juice as possible.

      3 Add the citric acid and simmer for another 2 minutes.

      4 Strain the mix through muslin and pour the extracted liquid into a sterilised bottle and keep in the fridge.

        We have also had masses (hubby loves them, but definitely not my favourite) this year so I've put a load in vodka to attempt homemade Cassis!
        If it ain't broke...fix it til it is!

          Someone who left our plot made a delicious cordial with blackcurrants.

          I turn them into jelly, much nicer than jam.
