For the last couple of years, I've not stopped mine, nor have I taken off the sideshoots (which is more debatable). The result seems to be slightly more fruit (not a lot) and a longer/later fruiting season. What I do though is to take of a lot of leaves to make sure they get as much sun as possible.
Choose different varieties and sizes. My latest tomato is usually either Summer Cider or Pink Brandywine (which are brandywine varieties) and I've had fruit from an unheated greenhouse in late November. The earliest I've grown is Bloody Butcher which I get fruit in mid-July.
