Fruits of your labour

Hello,
I have just moved into a new house and want to plant some fruit trees/bushes. When is the best time to do this? I am particularly interested in growing raspberries and blackcurrants, any tips? best varieties?

I think if you get plants in pots they can go in anytime.

....and if you buy mail order, I believe that they come 'bare-rooted' in winter when the plants are dormant.
