I did two earlier this week, they can be difficult depending on who had hold of the nail gun!!! Both mine were different.

If you don't have a scissor jack (not everyone does), stand the pallet on it's side edge, then using the BIG hammer hit the blocks down toward the middle. This will move them slightly, open a crack and start the nail pulling. After that tap a crowbar/lever in the crack and they open up a treat. I usually then hold up the lower plank with the three blocks on and knock them toward the middle to loosen them up.
Other tips: you only need to push the nail back through far enough to get hold of the head for levering out with a claw hammer or crowbar.
Some nails just seem to bend over no matter how straight they are and how cleanly you hit them. Bolt grop them shorter, then when you hit them the head pops out the back.
If the nail is rusted and the head snaps off, I've found gripping the hail shaft with the teeth of the bolt croppers and levering up will get the nail out, this can be very effectice even on really big nails.
Sometimes I come to realise that the timber is split and full of hard to remove nails. Not often, but learn that some boards are not worth the effort of saving.
Before subjecting pallet wood to power tools, look for staples that held on lables etc and the bits of wire that held the nails together in the nail gun. I've watched one chap who used a drill and reamed out all the nail holes to remove those bits of wire, saves on planer blades and the like.
