Beetroot seedlings

Hi guys, my first post here and I'm a bit of a novice when it comes to gardening, my only other experiences have been a couple of seasons growing chillies and tomatoes.
I am having my first bash at growing beetroot this year and I have planted the seeds in some left over jiffy plugs. I understand that the seeds can produce more than one shoot per seeds which explains my multiple seedlings in each plug, my question is though can each one of these shoots viably produce a beetroot or should I just keep the best of the bunch? The seedlings are getting a bit leggy now, maybe a couple of inches tall with fairly small leaves still and are falling over a bit, how deep should I plant these seedlings when planting them out? I'm used to planting down to the seedling leaves when growing chillies, is this appropriate for beetroot too?

Yup, each one is a separate seedling

More light, less heat They will be happy outside during the day (and after a week of in-and-out they will be happy outside, they are hardy)

Yup, you can do that when pricking out any seedling (of the type that has a pair of seed leaves, rather than just one [e.g. onions])

I grow 3 or 4 beetroot plants per-pot (or module cell). As they grow they push each other apart, and I harvest the other couple young as thinnings for the kitchen, and let one grow on to become bigger.

If you just want big Beetroot then planting them singly would be better, but you will get both Early and Main crop if you plant them in clusters

And they look nicer when planted in clusters....it's as nature intended so I just go with it.
