We love it just thrown in at the end of any pasta recipe, warmed through for two minutes. Or if you like curries, cube some potatoes, very lightly boil then fry with whatever spices you prefer - I use cumin, chilli, coriander, garam masala type combinations, and then add a few handfuls of spinach and a little cream or coconut milk for a great side dish. Its also good in quiche with salmon and cheese. My final favourite (!) is to put a slit into a chicken breast, stuff with a mixture of creme fraiche, parmesan and spinach then roll a piece of italian ham around to hold it all in and roast in foil for 20-30 minutes depending on the size of the breast.
