And how do you do companion planting. I will be planting herbs and flowers in my beds that are companions to the main crop.

The way I see it is - it's Companion, Rotational & Successional planting all rolled into one.

When you say running north -south , tallest things north. Which way north south, me looking facing north, ?

Yes the top of the page is north (it actually runs north west that fence)

Is it better to just completely mix em up?

Yes, just treat each square as a separate bed.

But you have to take into consideration the impact they will have on each other though - my main concern was tall plants casting shadow on small ones. Then factoring in the whole companion planting thing (or rather the things that dont go well together) i cant see how you would do it (without clumping stuff together in vague patches) without it being a massive logical puzzle. This is as much as my newbie brain can handle

                              Don't overthink it!
Tall stuff at the back, because of the shading, and mix the rest up. Next year, plant the same things into different squares.
                              Pick, eat and enjoy

I am definitley an overthinker. You want to see the pile of paper that didnt warrant a photograph
