Once I have taken all the peas from the plant, is the plant done for or do I leave it?

Yes that's it. The plant will die off anyway so are best cleared out to make way for something else. There was a thought at one time that the root nodules of legumes provided nitrogen for the next crop but I think this has largely been disproved.

What could I plant in its place or is it too late for anything now?

If you haven't done anything yet, you can plant garlic cloves and autumn planting onion sets now.

In my experience, if you have white rot (mouldy nose), in my experience, Autumn planting appears to lessen the damage but you need to monitor carefully next year when ripening.

It is still good practice to chop off and leave the legume roots in the soil. They do fix nitrogen although it's free it's not overly plantiful and does no harm whatsoever.

If you didn't do this already - remember next time your planting peas plant your first seeds wider apart than normal, a week later plant some seeds in the gaps and third week plant more between the first two sowings. You will have a much more prolonged crop.
