    is it against the rules to interbreed

      I don't think chooks would actually breed with birds of other species (something I was worried about as I'm getting some quail, a breed that is about the size of a bantam). I was concerned that the male would take a fancy to my chooks!
      But I should think a cockerel will mate with any female hen thats about. Many breeders sell crossbreeds, so I should think not.

          It is acceptable to put father to daughter and mother to son, brother to sister is not a good idea. Too close interbreeding can cause problems like infertility, however if you wish to keep a closed flock then next year put grandmother to grandson from fathers side and and granfather to granddaughter from mothers side and you will eventually distance the interbreeding a bit.
