Is it my imagination or do your own fresh eggs make the best cakes ever. If this is so, why?

Yes they do! Madeira cake is especially fab, it uses more eggs than a normal sponge cake and is simple but lovely scrambled eggs are brilliant too, don't need any milk to bulk te mixture out, just two eggs whisked together. When my hens stopped laying in November I had to resort to buying free range eggs from the man in the van who comes round every Friday. WHen I made scrambled eggs, it just looked wrong... so anaemic in colour that even my OH asked what was wrong with them!

I'm amazed at the difference too!!. Untill Monday I'd never experienced a really brand new fresh egg. The Clear stuff (can't remember scientific name) is so different from shop brought eggs. The only way I can describe it is "tight" in comparison. I guess shop broughts have already started to break down by the time we get them - yum

On Saturday I used 4 small eggs to make a chocolate cake. 8" diameter, 3 layers all nearly 2" high! (Had to give more than half to youngest daughter to take home for the family before it went stale ) Yes, your own fresh eggs really do make the best cakes, quiches, scrambled, omelettes etc EVERMy girls found their way into my heart and now they nest there
