I would feel the same, I couldn't eat one of the girls either. I bet you will get attached to the new girls. It's so hard not to. 
My ex-batts will eat a softie but not a good egg. I use lots of shavings and a dark nest box as the girls don't see well in the dark. I'm not sure hard boiled eggs would help stop egg eating as they smell really strong. Not sure if the mustard filled eggs would work either as my lot love hot and spicy food.
Good luck with the new girls. Lifes too short to feel guilty.
