Depends on the quantity you give them, the colour would need to be in quite high concentrations I would assume given the amount needed in humans to colour their wee. Anyways red and yellow make orange so I would have though the yolks will just go a deeper orangy colour.
But i'm no expert on this mine never get beetroot skins (mainly cos I don;t grow them!)
The carotene colours the yolks. I don't think there is anything else in beetroot that can get through into the eggs. It should just make the yolks a richer colour, unless beetroot is one of those things that are poisonous too chooks (seems unlikely).
Flowers come in too many colours to see the world in black-and-white.
Mine have had beetroot, leaves and the root bits. They're not keen on the roots raw, but gobble them up when they're cooked. None of the eggs have had red yolks, so no worries there
