I don't get eggs yet, but planning ahead for the egg glut to come I bought a pickled egg from the Chippie. Wasn't taken with it so I shall have to learn how to make brulee and custard.

I think we did have more eggs than we could use, once upon a time. The dogs got eggs for supper every other day for a couple of weeks, then other people started needing eggs....Flowers come in too many colours to see the world in black-and-white.

We don't have gluts to use up. When it gets to a dozen or so I give some away. With only 4 chickens it's not worth selling them. I give next doors each side a box every now and then, otherwise it's the aged parents or people we visit. And of course, the grandchildren get them. That's what grandkids are for - spoiling!Whoever plants a garden believes in the future.

Any that our grandson collects he gets to keep. As egg collecting is currently his favourite pastime this means there aren't too many spare. I'm going to make some lemon curd over the weekend. It's not something I've done before, and worse I now have 3 different recipes so don't know which one to use, but two say use 3 eggs and the other one says to use 4, so I'll probably go with that one.Into each life some rain must fall........but this is getting ridiculous.

One egg, half a lemon (juice and zest), 1oz butter and 1 tablespoon sugar will make a sweet, sharp curd ... adjust to taste. Easy to remember ...

When we have too many eggs, Mr P make Amerretti biscuits and lemon curd. I do bake plenty at those times too. Also we give them away to a couple of people who tend to drop round veggies for the chooks when they have grown too many
Sue, I think I could really do with trying your creme brulee recipe though, as I feel it is something I may be missing out on ;p
