Before the Norfolk Blacks, we had previously kept White and Bronze turkeys (NOT broad brested, and always in small numbers), and used the broomstick method for slaughter. Never had any problems at all, although they were not QUITE as big as the ones you describe. I suspect the method was not ideal. With the broomstick approach, not only does holding the bird head down calm it, but the position in which it is held while actually despatching means that the scope for hurting the person doing the job is much reduced. The weight of the bird suspended by the legs means it can't 'kick' and the wings are not in a position to hit you hard.
