To wash or not to wash....

If they are for your own consumption then use warm water. If you use cold water the egg shell will contract drawing the bacteria in (aparently).

I was told the opposite!

Well it just goes to show that what ever way we do it / have done it, and for however many years....we are all still here to tell the tale!

Just to add a little more confusion.....once you've washed/wiped/scraped or left your eggs dirty do you store them tippy end up or down?
I've never really thought about it,although seem to remember being told that eggs for hatching should be tippy end down(?).My neighbour just asked me and I said I didn't have a clue?
(and yes I know it probably doesn't make that much difference,would just be interested to hear any scienctific/Old Wifey tale reasoning for one way or the other)

I understood that point down was the way to store them, because of the air sac at the fat end?

I don't wash my eggs unless they are absolutely covered.... my customers quite like 'dirty' eggs

We store ours Pointy end down because

a/ If you want to hatch them it helps the air sack stay in the right place

b/ They fit in the egg box better

c/ Thats the way i've always done it!!!!

I rub my filthy eggs very gently(once dry) with a bit of the green scratchy stuff you use for dishes, just to get the worst of the muck off. Eggs for eating are stored on their side in an earthenware hen and those for hatching are stored pointed end down in egg boxes.
