OK- so I'll start with 3

Toulouse- we think one male and 2 female- and they're just 10 weeks old.

Two, a breeding pair (chinese x embden) about 1 year old now. And she's glued to a lovely down lined nest..and if you think I'm braving her AND him to count the eggs you are seriously nuts

No, I stopped keeping livestock some years ago when I moved to a house with very little garden. I used to keep a pair, plus goslings, but not recently!

I suppose I should add my three Embdens. Two Fellas and a Girl, since the other Girl disappeared last year. Can't decide if we should eat the spare Fella or get him a mate. Will the dominant Male pair with both females if I do this?

Not hand tame, but if you walk toward them, they walk away! Far better than my friends' Geese who would attack on sight. She sold them as property guards in the end!

To keep a gander docile, pick him up frequently. If he attacks get hold of his head and lift him off his feet for a few seconds (by the head-hold, it won't do him any harm if it is only brief). No idea why it works, but having his feet off the ground intimidates him just enough to avoid attacks (but no guarantee it will stop him 'having a go' at anyone OTHER than the one who picks him up).
If in any doubt about a gander's temperament, don't allow children near him. If he has a 'family' to look out for, he will be more insistent about them being left alone. If you need to handle a gosling, get someone else to distract the Daddy!

Best of luck! Geese are very protective, and a gander is usually a good husband and father (even if he is also a bigamist, trios work quite well). Even if he trusts you, he MAY still get aggressive when he has a family to protect.
As with cockerels, the tamest youngsters may not stay that way once they grow up (or they might). If you have a good pair of geese, you don't need a watchdog!

I have 3 - probably one boy and 2 girls - supposedly embdens

Come Christmas they will be dinner

So that makes 10 (at least for another couple of months)
