  • Egg cookbook

    Probably more relevant to the folk in this forum.. I'm trying to decide between two books to buy.

    One is 'Eggs' by Michael Roux - which has great reviews, the other is 'Take a Box of Eggs' by Emily Davenport, Lucy Knox, Nick Rowe and Emma Callery - which is an old book which seems to have stood the test of time.

    Do any of you have either?

    I'm getting between 5 and 6 eggs a day now, which is great - and with a new kitchen I'm putting in, I want to get back into cooking (used to cook a lot, but as of the past few years I hardly cook anymore). Quite interesting in doing "more" with the eggs that my hens supplying us with.

    Nope- not heard of them either!

    Simples....just get both ...after all the effort you've put into that kitchen- you deserve a few treats!!!!

      Delia Smith had a book on eggs aswell as far as I remember. I like Delia, I always make a bechamel sauce the Delia way, 1 oz flour, 1oz butter, 14 fl oz of milk, all in a pan together and stir over a heat. Absolutely fail safe.

        I have the Michel Roux one, but tbh don't use it a great deal. Not heard of the other one you mention. I make lots of cakes (I often use an ounce less butter and add an extra egg), quiches, omelettes, and the children adore fried egg and bacon. A lot of eggs get consumed in this household!

        Mikey I'm also a Delia fan, and always follow her creme caramel recipe which handily uses 4 large eggs, although you can put 5 in if you wish.

          Fab tip- I'm going to try that one!

          I'm also a Delia fan and give a thumbs up for her creme caremel recipes, although made her 'petit mont blancs' tonight. Delicious!

            A surfeit of eggs used to mean Zabaglione. Here's a Delia version (haven't tried this one myself) Zabaglione - Sweet - Recipes - from Delia Online

              I have the delia cookbooks too - the chocolate mousse is amazing.. though I think my kiddies are too young to be eating raw egg..
