Finally got my chickies!

    Lemon Icecream Recipe for kirsty

    Hi Kirsty
    Found this in Hens in the Garden, Eggs in the kitchen
    225g Caster Sugar
    8 egg yolks
    grated rind of 2 large lemons
    4tbsp lemon juice (I like more than this, ie 6 tsbp
    300ml double cream

    Warm the sugar in either the oven or a microwave (this quickens the whisking process) putthe egg yolks in a mixing bowl and add the cater sugar. Whisk until very thick and whisk in the lemon rind. Whisk the cream and lemon juice together and fold into the egg yolk mixture. Turn into a freezer container and freeze until firm. Remove 15 minutes before you wish to serve the icecream.
    Serves 8

    And I freeze this in individual pots to make 10 portions, it is very rich. I'm also experimenting with cutting down on the cream by adding greek yoghurt and that seems to work well.

    It is very lovely and when I've made the cake with the 7 egg whites I'll post that but at the moment it's courgette cake to use up all my donated marrows, so it will be a while yet.

      Hi OWG,

      Thanks for letting me know the feed and shearing us their picture, they are amazing birds !
      I have a guinea pig and a dwarf holland rabbit, too bad they can't lay eggs.
      Have lot's of fun with your girls and their produce,

          The 'penalty' of not reading the vine every day - pipped to the post asking for the recipe!

          I'll give it a try tomorrow - got 20 eggs to use up!

            The other thing I've got addicted to is egg mayonnaise sandwiches. Can be very self-sufficient with these. 2 eggs in the mayonnaise, 2 eggs hardboiled for the sandwiches (4 portions) with chopped pickled allotment shallots and all on home made courgette bread with allotment lettuce. Absolutely delicious and another 4 eggs used up!

            I expect like me you've never eaten so many eggs now you've got chickens, whole new cooking experience isn't it.

              And they taste so much better! Shame I'm not ment to eat more that 2 a week

              So tomorrow will be, lemon ice cream, lemon meringue toppers, meringue biscuits, cherry madera cake, fairy cakes for the kids to decorate....
              Let me see, 8+4+egg whites+3+2 = 17! That should take care of the glut!

                        Made the ice cream, added the extra two tbsp of lemon that Kirsty recommended - delicious! Made the meringues, ok - oven was a little too hot so they browned and will need eating up fast (how tragic! )

                        The rest of the mad fest never happened - Mum and Dad called in on their way home from the Three Choirs Festival and asked for eggs for their supper and also for some neighbours of ours who had been looking after the house for them - which took care of 10 eggs!

                        So having used or given away 18 eggs........

                        There will be other cakes.......

                          They are Warrens - hybrid birds bred for egg producing. Apparantly they make OK table-birds, but our girls are just for eggs

                          In the space of 6 days we've had 9 eggs, some days just one and some days 2... had scrambled eggs this morning and made egg mayonnaise for sandwiches this afternoon....

                            Wasn't me that recommended more lemon Terry, I haven't got round to trying it yet!

                                Well at least the eggs are dealt with!
                                There's just so much cooking and preserving to do at this time of year, hard to keep up with it all, but at least the cooler weather means we're not sweltering in the kitchen.
