I put a hyacinth in a vase on 7th September and covered it with a brown paper bag to keep it dark. There is a lot of root growth, but there is no sign yet of the stem starting to sprout. Am I being too impatient, or should I remove the bag?

The point of keeping them in the dark is to encourage root growth so be patient. Eventually your shoots will appear but you don't want them too soon if the flowers are meant for Christmas. Keep them cold and dark until December if you can.Whoever plants a garden believes in the future.
