Yes, I agree with NG, you want to get as many shoots from near the base as possible, so pinch out after the first 2 or 3 true leaves.
I find they germinate much better in the light, so I either chit them first on damp kitchen roll, or put them on the surface of the compost with a light covering of vermiculite, which allows the light through.
Hi. My first season growing sweet peas. I sowed a few varieties of sweet peas in Oct last year. About 20 odd plants in total. What I did was I pinched off the tops of all of them after their first true leaves came up. And continued to do so monthly to date. Currently they all shave about 8-10 shoots each and all about 6 inches tall now. All hardened off and planted out. Not sure with everyone else but I would keep pinching them off regularly till you eventually plant out
