I bought some yellow stickered lemon grass from the shop. It has to have the stem base intact (not pruned off) and the leaves to be green and firm - not withered and dry.
Stick them in a glass of water, just covering the base and forget about them. Top up the water/change it if smelly and wait for the little roots to grow from the base (bit like spring onions).
My flower pot had about 8 plants in it but some dried up and have been pulled out.
I've done this several times and overwintered them somewhere dry.
Its easy if you can get the lemon grass to start with.

Found a source for Saffron crocus bulbs, but as they are a late summer flowering plant I'll order them in the new year. As we don't always get much of a summer I think I will grow them in a container, that way I can move them in and out of the greenhouse, despite them being hardy, I reckon they'll need all the help they can get.
