I found a nice recipe for Lemon and Mint Cordial a few years back when we were overrun with mint from a rogue mint plant that grew from the other side of our fence.

nice an simple, Lemon juice, Water, Sugar, Mint leaves (obviously) and citric acid.

very refreshing, and a nice mixer...

Black peppermint is my favourite for tea.

Black peppermint is definitely the best for making tea. The flavour is really strong and minty. Spearmint or peppermint are wishy washy compared to it.

I had a rather nice mint growing in a bucket but that died the other winter no reason why the other 3 in the group were fine.

There’s a recipe in the link for mint choc chip ice cream & it’s good you don’t need a machine to make it. I’ve got a chocolate mint plant,smells really nice but I don’t do anything with it thanks for all the good ideas here,I might try something this year

The only place I’ve ever managed to grow mint here is in my gravel driveway where the roots don’t bake in the heat or dry out.
They do have fairly shallow roots.
My friend has hers growing next to a slab so the roots are protected under that.
Maybe Ms_T it’s worth looking for a more sheltered position from the sun,( but where they get rain )where the roots can hide underneath something?
Back in the uk I had no problems at all with mine but the soil was more moist than here.
