Storing Herbs & Spices?

Hi all!

I know dried herbs and spices should be kept in the dark and dry, but do they have to be in an airtight/waterproof container?

Do they lose their potency if air can get to them?

What is considered the best way to store them?

Do you buy your herbs and spices loose or in containers, Red? If they come in containers then these should be fine. If not you can buy either small glass jars with screw tops or the small "tupperware" type plastic containers. They do lose their potency over time so it's best to buy little and often. If they're home-produced then storage depends on type - some are better dried, and some frozen.

I keep mine in a dark cupboard and in sealed jars. I only keep small amounts. If possible keep seeds then you can roast and grind them. (spices obviously!) Herbs I would grow and freeze in ice cubes.
