coriander seeds

Hi, I am new at trying to grow herbs, previous attempts have gone to seed or been neglected. I started some coriander, it went to seed so quickly so I intend to gather the seeds - but hw do I know when they are ready to be picked?

when they're dry, let the go as dry as possible on the plant, then dry some more indoors, then pack away and keep for next year or eat in various food
