coriander seeds, drying

Grew some coriander, lots of nice carrot and coriander soup.
They have gone to seed now and some have turned brown.
Pick the lot and stripped all the seeds. Most are green. Will they dry out and be usable for curries etc.

Jimmy I pick mine when they've turned brown then I dry them hung indoors on string away from direct sunshine, it takes a couple of weeks.
I use them in curries, breads and teas.

As Bren says, they will probably dry out all right for culinary use but be very careful they don't go mouldy/musty in the process. They are less likely to give you new plants as they should be ripened on the plant.
