What herbs are suitable and best method, I know you can freeze coriander in ice cube tray, chopped and with a bit of water.
I've got basil, thyme and sage, would this method work?

I chop and freeze coriander in bags/boxes - it freezes well 'dry', no need for ice cubes. Parsley also freezes well this way but basil and sage do not (in my experience). They tend to break down and don't defrost very well, though I've never tried adding water before freezing. No idea about thyme...

Thyme is best dried. I put it into bunches with a rubber band, and hang it from the beam in the kitchen, same with oregano and marjoram.

I dry sage in the dehydrator, another good way is spread out on a cooling rack on the dashboard of your car in the sun, takes about 4-5 hrs on a sunny day

I might try this - I didn't think of using oil.
