I don't know if this is of any use to you, but when I wanted to grow some watercress a while back, I got some from the supermarket and rooted it in a jar of water. You can then plant it in a damp piece of ground or in a tub (sat in a basin of water) just watch out for the slugs. Not sure if this is the proper way to do it or what you're after! But I got plenty of plants out of a bunch bought from the shop.

Yep, I did the same.
The thing is though... I thought watercress grew in fresh water. A running stream in fact for the oxygen. I reckon your onto a winner if you happen to have one running through your land.
