I make courgette and Parmesan soup, courgette fritters, in a bread mix they are delicious....but I will also eat them sliced and fried with garlic and some sprinkling of fresh herbs.

I like Traditional Greek Kolokithokeftedes (Fried Zucchini/Courgette Balls) Recipe - My Greek Dish -similar to Mucver

or just sliced, dipped in flour, shallow fried until crisp, with a a sprinkle of cheese, or a dip or a side dish

If you like them sliced and fried in flour, try them dipped in a mix of fine breadcrumbs and finely grated hard cheese (Myzithra or Parmesan) and fried 'til golden - lovely.

Or use the same mix as a crumble topping for sliced, quickly pan-fried sliced courgettes/potato/tomatoes then oven baked for about 20mins to brown the top.

Courgettes and Parmesan is a lovely combination.

I'm not convinced you'll taste any courgette in that cake

My OH is so-so about courgettes, so it's interesting to see different ways of using them that I can try. I'm sure he'll like the chocolate cake.

We both like this courgette soup, it has a light and delicate flavour About your privacy on this site. I put yoghurt in rather than cream, or some soya or ordinary milk.
Mostly flowers, some fruit and veg, at the seaside in Edinburgh.

Oooh I am going to try that soup when I got the courgettes again! And that cake recipe really is a winner. I baked it for the first time quite a few years ago and took some in to work. My boss at the time really freaked at the thought of cake with courgettes... lol Now she's got three plots of my allotment sites and I just posted her a link to the cake on Facebook haha
