Depends what you like to eat. Personally I've got the following going already: Potatoes in grow bags, carrots in pots, Onions, shallots, Leeks, Salads, corriander, Tomato, Chillies, chard, spinach, Broad beans.

Unless your greenhouse is heated then it's too early for toms or chillies although they'll be great in there later in the year. At the moment you could have early pots, leeks, early summer cabbage, early caulies, carrots, peas, mange tout and much more. Give us a clue what you like and am sure people will have more ideas.
Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.
Which one are you and is it how you want to be?

I have a small polytunnel 2 metres wide by 4.5m - I have shelving at the moment down one side to try and maximise my storage and for young plants to grow on
I plan to have 5 1m x 50cm beds, 2 1mx1m bed.
What grows well in this type of space. I like parnips, leeks, salads, defo chilli and toms carots potatoes kale peas and I wouldnt mind melons
what I was thinking was, what goes well together, eg leeks behind lettues, etc
so I can maximise space inside.
can melons grow at the back of something else?

Parsnips like it cold and taste much sweeter when they've had a frost on them so I wouldn't bother growing them in the tunnel, personally I wouldn't bother with leeks or kale in there either although I am thinking of overwintering some leeks in there next year for seed saving purposes as recommended in my seed saving book.
Re the melons thing, I am intending on having them in the same bed as my aubergines but at the back. Don't know if it will work but that's the theory.
