onion sets planted now are overwintering types,should be ready earlier than main crop,will not store for long,a lot of peeps do this,then either as zaz said,or plant sets of a different type around April,these will store for several months,then if the seasons are kind your autumn sown sets will come into use,before the next lot of mains,hope it makes a bit of sence for you,

Thinking of sowing some onion seed in my greenhouse, any advice please.

If you wanted to sow onions from seed for overwintering, you should have been doing it back in August really...My Hi- ball ones are doing well at this stage, and I will be transplanting them into the ground soon...I am going to leave a few in pots in the greenhouse this year and transplant them in the Spring if all goes well... Just for comparison purposes...
As others say,now is a good time to put in overwintering sets, so that is an option- I can recommend Radar...
If you are determined to grow from seed, wait, as Zaz says, until late December and sow then...

If you really do want to sow some onion seed now then you probably wont find any better advice than here, although it's aimed more at showing than eating:
