A vinegar taste in fruits is usually associated with fermentation.
I'm just guessing here but could it be that the cucumber was starting to deteriorate in the wet, seedy middle bit but that the rest of it had not yet turned?
That would give you the vinegar taste but without any mushy-ness in the flesh.
I'm growing T&M Long White. I tried one the other day - 5" length - and it wasn't nice. Bitter? Maybe... not really sure. I'm hoping it was just undersized and they're not all going to be like that. Saying that Bella F1 eaten at just a couple of inches are not unpleasant, just a bit tasteless.
The creation of visually weird and wonderful cultivars seems often to be at the expense of taste. Just my opinion.
