With regards to getting the height right for the plants.........think outside the box...............if you can't lower the light due to different heights, hows about raising the plants on books or owt really, that way the light stays at a static height but the plants can be raised to suit their needs. If you have the light to far away the plants like you say will reach for the light and become leggy.

My portable LED grow stations, the trays start off on top of another tray with module so that they are near the lights and as they grow and start to touch the tray I remove the lower tray

Which lights are you using? Won't that be too close to the plants? (asking because the spec on my one says 18 inches away during veggie stage)

They are Panels I bought from e-bay 225 LED 14W Grow Panel Red Blue Hydroponic Light Board Grow Tent LED hanger for £9.99 including delivery see Alans Allotment: LED Portable Grow Station the lowest price at the moment is £15.99 inc free delivery

There is little heat generated as they are LED and I have had no problem keeping a minimal gap as the light intensity obviously reduces with distance, the taller tomatoes in the bottom picture really need potting on but I have been resisting because of the cold weather but as that's now changed they will be coming out and new seed will be going in.
