We had the same problem with a greenhouse we bought second hand. In the end we used a bread knife with a flexible blade and cut out each pane of glass. It was a horrible job and very time consuming. Good luck!!
May all our seeds germinate and grow

try a hot air gun: very gently: warmed mastic moves much more easily.

Mine is designed to use beads / ribbons of blu-tack like mastic to bed the glass on with stainless steel spring clips on top.

When I dismantled and moved it I used a Stanley knife to deal with the mastic, where it was still sticking.

Good grip, easily changed sharp blades, which are sturdy, yet flexible enough. Proper Stanley knife mind.

Could try Nitromose liquid gel paint stripper?
