  • Growing Thai Green Curry

    My personal challenge this year was to grow as much as I can (in pots) for thai green curry. And then cook it from scratch

    Challenge completed two days ago

    Homegrown:
    Thai aubergines - Kermit F1, I am really happy with them
    Thai basil, lemongrass
    Chilis - I used cayenne (green for the paste, red for cooking), I don't have bird's eyes
    Also homegrown but not photographed: Green runner beans, coriander roots

    Bought: Galangal, shallots and garlic (these would be easy to grow but a bit boring), kaffir lime leaves, limes

    I will have one more lot from the aubergines later so I will do it again (or maybe red curry). And I certainly will grow them again next year.
    I also want to buy a lime tree. I am thinking about doing it properly and getting a kaffir lime tree but not sure yet.

    Well done Ani. Sounds lovely!
    I'm intrigued by your use of coriander roots - didn't know they were edible.
    Can you share the recipe you used please?

      They are but they are quite small, much smaller than parsnips. The taste is similar to leaves but milder and slightly rooty or earthy.

      I used mostly this recipe:

      But I also used other recipes and averaged them, so the result is a different recipe. And I made it with prawns, not chicken I am really bad at following recipes.
